First sold in 1953 as food supply stabilised after the war, Miyazaki’s long-running box centres dried shiitake from the prefecture’s north. The maker describes cooking them repeatedly and building flavour with an inherited simmering liquid. Time is an ingredient here: drying, rehydrating and slow seasoning.
