What is negitoro?
Negitoro is a soft filling made from finely chopped or minced tuna. In hosomaki, sushi rice and nori hold that filling in a narrow roll. The menu name does not guarantee one tuna species, one cut, a fixed amount of fatty toro or the same quantity of spring onion at every restaurant.
