The useful comparison is not with one “original” curry, but with the meal’s structure. Japanese home curry commonly places a thick, roux-based sauce beside short-grain rice and lets each household decide meat, vegetables, sweetness and toppings. The roux brings flour, fat, seasoning and spices together, which is why the package—not a travel article—must control water, heat and allergen decisions.
In a Japanese supermarket, begin at the curry-roux shelf and read the serving count and spice scale before buying vegetables. “Mild” describes heat, not the absence of spices or allergens. At home, cut pieces evenly so they finish together, dissolve roux off the heat to reduce scorching and taste before adding a family-style secret ingredient. One careful basic pot teaches more than adding every optional idea.
The second-day curry remembered by many households is also a food-safety decision. Divide a large pot into shallow containers and cool promptly rather than leaving it on the stove. Reheat only the amount needed and stir so the centre becomes fully hot. If cooling conditions are uncertain, discard it; nostalgia is not evidence that food is safe.

Method

Cut vegetables and meat into spoon-friendly pieces.

Cook onion in oil until softened; add the meat and cook the surface.

Add carrot, potato and water. Simmer gently until the vegetables are tender and the meat is fully cooked.

Turn off the heat. Dissolve the roux a little at a time; follow the package directions.
